Although this married couple enjoyed their new fishing boat together,
it was the husband who was behind the wheel operating the boat. He
was concerned about what might happen in an emergency. So one
day out on the lake he said to his wife, "Please take the wheel, dear.
Pretend that I am having a heart attack. You must get the boat safely
to shore and dock it." So she drove the boat to shore.

Later that evening, the wife walked into the living room where her
husband was watching television. She sat down next to him, switched
the TV channel, and said to him, "Please go into the kitchen, dear.
Pretend I'm having a heart attack and set the table, cook dinner and
wash the dishes."

With the great Scandinavian tradition of the smorgasbord, it would
be inconceivable to offer a selection of small dishes without a
selection from that part of the world.

Scandinavian Herring and Potato Salad

1 lb (450 g) small red potatoes, cut into bite-size pieces
1 1/2 cups (375 ml) pickled herring fillets, coarsely chopped
1/2 cup (125 ml) sour cream
2 ribs celery with leaves, chopped
2 Tbs (30 ml) lemon juice
2 Tbs (30 ml) chopped parsley
2 Tbs (30 ml) chopped fresh chives
Lettuce leaves for garnish

Boil the potatoes in salted water until tender. Drain, cool to
room temperature, and combine with the remaining ingredients,
tossing to combine. Refrigerate at least 2 hours and serve
chilled on a bed of lettuce leaves. Serves 6 to 8 as an appetizer.
