The Chinese don't have a strong tradition of serving a sweet at the
end of a meal. Fresh fruit is often the dessert of choice, and here
is a variation on that theme.

Chinese Orange Pudding

1/2 cup (125 ml) pearl tapioca
2 1/2 cups (625 ml) water
1/4 cup (60 ml) sugar
1 large orange, peeled and cut into segments

Soak the tapioca in 1/2 cup (125 ml) water for 4 to 6 hours. Combine
the remaining water and sugar in a saucepan and bring to a boil.
Drain the tapioca and add to the water mixture slowly, stirring constantly.
Cook over moderate heat, stirring constantly, until the mixture thickens,
2 to 3 minutes. Gently stir in the orange segments and return to the boil.
Serve immediately. Serves 4 to 6.
