This one almost made me blow diet Coke out of my nose. Thanks
to George in Poughkeepsie for sending it in.
Although we were being married in New Hampshire, I wanted to
add a touch of my home state, Kansas, to the wedding. My fiancee,
explaining this to a friend, said that we were planning to have wheat
rather than rice thrown after the ceremony. Our friend thought for
a moment. Then he said solemnly, "It's a good thing she's not from
Idaho."

This Middle Eastern favorite can be made with any flavoring that
strikes your fancy.
Turkish Delight
2 cups (500 ml) sugar
1 1/4 cups (310 ml) water
1 envelope (2 Tbs, 30 ml) unflavored gelatin
1/2 tsp (2 ml) cream of tartar (tartaric acid)
2 Tbs (30 ml) lemon, orange, or mint extract
Food coloring (optional)
3 Tbs (45 ml) powdered (confectioner's) sugar sifted with
1 Tbs (15 ml) cornstarch (cornflour)
Combine the sugar and 1 cup (250 ml) of the water in a small
saucepan and heat over low heat until the sugar is dissolved, stirring
occasionally. Combine the remaining water and gelatin in a small bowl
and place in a saucepan with a little hot water in the bottom,
stirring until dissolved. Boil the sugar syrup for about 8 minutes,
or until it reaches a temperature of 260F (125C). Stir the cream of
tartar into the gelatin mixture and add to the boiling syrup, stirring
to combine. Remove from the heat. Add the flavoring and a few drops
of food coloring of the appropriate color if desired. Pour the
mixture into two 7-inch (18 cm) square shallow pans and let set for
several hours. Lightly dust a piece of wax paper with a little of the
powdered sugar mixture. Dip the bottom of the pans into warm water
and invert onto the wax paper. Cut the Turkish delight into 1-inch
(2.5 cm) squares and toss in the remaining powdered sugar mixture to
coat evenly. Makes 1 lb (450 g).
