It had to happen sometime. I have finally run out of clever ways to
say, "quick and easy," so here's the lineup for "Another Quick and
Easy Menu":

Monday's Starter
Quick Cheese Nuggets

Tuesday's Soup or Salad
Quick Mushroom Soup

Wednesday's Side Dish
Quick Pasta with Egg and Cheese Sauce

Thursday's Entree
Steak au Poivre

Friday's Dessert
Quick Lemon Meringue Pie

You can use just about any firm cheese for this recipe, or you can
combine several small chunks of leftover cheese to make a unique
mixture.

Quick Cheese Nuggets

2 cups (500 ml) shredded firm cheese such as cheddar,
Gouda, Swiss, Gruyere, Havarti, Jarlsburg, or Monterey Jack
1 rib celery, finely chopped
2-3 Tbs (30-45 ml) Dijon mustard
Salt and freshly ground pepper to taste
Hot sauce or cayenne pepper to taste (optional)
About 1/4 cup (60 ml) finely chopped fresh parsley

Mix together all the ingredients except the parsley. Form into
small balls and roll in the chopped parsley. Refrigerate until
ready to serve. Serves 4 to 6 as an appetizer, or 8 to 12 as an
hors d'oeuvre.
