Hummus is a Middle Eastern dish based on pureed garbanzo beans.
The beans themselves are so mild in flavor as to allow endless variations
on the theme using different seasonings. This version tastes like the
holidays, with the orange juice and ginger, so why not serve it at your
next gathering.
Orange Hummus
1 - 15 oz (420 g) can of garbanzo beans
(chick peas, ceci), rinsed and drained
3 cloves garlic, finely chopped
1/4 cup (60 ml) orange juice
2 tsp (10 ml) grated orange rind
1 tsp (15 ml) Dijon-style mustard
1/2 tsp (2 ml) curry powder
1/2 tsp (2 ml) ground ginger
Salt and freshly ground pepper to taste
Pita bread for dipping
Combine all ingredients except for the pita bread in an electric food
processor or blender and process until smooth. Serve with pita bread
for dipping. Serves 6 to 8 as an appetizer.
