Asian-Style Carrot and Cabbage Salad

know that all is well in the Land of Bad Food Puns:

Farmer Jones had heard that the best milk comes from contented
cows. Therefore, he'd visit them every morning and tell them jokes. The
cows laughed and laughed, and they gave excellent milk. However,
the news got around and no one else was much amused. Thus, his
cows became the laughing stock of the community.

You'll probably want to use this salad dressing on other things,
including sliced raw mushrooms and cooked green beans, so consider
making a double batch.

Asian-Style Carrot and Cabbage Salad

For the salad:
1 lb (450 g) Napa or Savoy cabbage, cored and shredded
2-3 carrots, grated
2-3 scallions (spring onions), green and white parts,
finely chopped

For the dressing:
1/4 cup (60 ml) peanut oil
2 Tbs (30 ml) lime juice
1 tsp (5 ml) soy sauce
1/4 tsp (1 ml) dark sesame oil
Salt and freshly ground pepper to taste

Combine the salad ingredients in a large bowl. Whisk together the
dressing ingredients and pour over the salad. Toss to combine and
serve immediately. Serves 4 to 6.
