"Partan" is a Scottish word for crab, and "bree" means liquid or
broth - those Scots have to have a word for everything.
Traditionally made with fresh boiled crab, it becomes a quick and
easy soup with the used of canned crab meat.
Partan Bree
2 cups (500 ml) milk
3/4 cup (180 ml) rice
2 cups (500 ml) fish stock or bottled clam juice
1 can (6 oz, 170 g) crab meat, drained and picked over
1 cup (250 ml) half-and-half, heavy cream, or milk
1 tsp (5 ml) anchovy paste, or to taste
Salt and freshly ground pepper to taste
A pinch of ground mace
Cayenne pepper to taste (optional)
Bring the milk and rice to a boil in a saucepan over moderate heat
and simmer gently, stirring occasionally, until the rice is tender,
about 15 minutes. Puree the milk and rice with an electric blender,
or press through a fine sieve and return to the pot. Add the
remaining ingredients and bring to a simmer. Serves 4 to 6.
