Waiting for our aerobics class to begin, several of us were standing
around in our leotards chatting about fitness and diets. One woman
said that her brother-in-law had quit smoking, gone on a diet and lost
weight all at the same time. Thinking to myself that no human being
could possibly do this without acquiring at least one other
undesirable habit for compensation, I jokingly asked her, "What did he
start doing instead of these things?" After a slight pause, she
smiled and said, "Well, my sister is pregnant now."

The Finns like to put cream on just about everything, and this recipe
demonstrates how successful their approach can be.

Finnish Mushroom Salad (Sienisalaatti)

1 lb (450 g) sliced fresh mushrooms
1/4 cup (60 ml) heavy cream or half-and-half
1 tsp (5 ml) sugar
Salt and freshly ground pepper to taste
Chopped fresh chives for garnish

Plunge the mushrooms into boiling salted water and cook for 1 minute.
Drain thoroughly and refrigerate until chilled. Combine the cream,
sugar, salt, and pepper and toss with the mushrooms. Serve chilled or
at room temperature, garnished with chopped chives. Serves 4 to 6.
