TODAY'S RECIPE

The fluffy, sweet custard that tops the berries requires a little bit
of elbow grease, but I'm sure you'll agree it's well worth the effort.
Berries with Maple Zabaglione
4 egg yolks
1/2 cup (125 ml) maple syrup
1 tsp (5 ml) almond extract
4-6 cups (1-1.5 L) fresh berries or mixture of berries of your choice
1/2 cup (125 ml) toasted slivered almonds
Combine the egg yolks, maple syrup, and almond extract in a pot set
over - not in - a pot of simmering water and whisk constantly until
quadrupled in volume, about 5 minutes. Spoon over the berries and
sprinkle with toasted almonds. Serves 4 to 6.
