The cheese on the inside of these burgers not only lends a smokiness
without having to fire up the backyard grill, but the melted cheese
helps prevent the interior from being overcooked.

Lamb Burgers with Smoked Gouda

1 1/2-2 lbs (675-900 g) ground lamb
4-6 thick slices smoked gouda cheese
Salt and freshly ground pepper to taste

Form the lamb around the cheese to make 4 to 6 patties. Season with
salt and pepper and grill, broil, or pan-fry until browned on both
sides and firm to the touch, about 3 to 4 minutes per side. Serves 4
to 6.
