A woman who had invited some people to dinner turned to her
six-year-old daughter and said, "Would you like to say the blessing?"

            TODAY'S RECIPE

I have labeled this week's recipes for Quick and Easy Pasta Sauces as
"sides" even though we all know that they can also be served as the
main course if the portion size is increased. And I don't care what
the Atkins Police say, pasta is quick, easy, nutritious, and
satisfying like few other food products, so I'm going to continue
eating it at will - in moderation, of course. Here are our Quick and
Easy Pasta Sauces:

Monday's Starter
Three-Pepper Sauce

Tuesday's Soup or Salad
Arugula and Garlic Sauce

Wednesday's Side Dish
Chicken Liver and Sage Sauce

Thursday's Entree
Caramelized Onion and Red Pepper Sauce

Friday's Dessert
Fresh Tomato and Herb Sauce

Here is a quick, easy, and healthy sauce that appeals to the eye as
well as the palate. And please don't turn up your nose at the
anchovies. They disappear in the sauce and leave behind only a faint,
unidentifiable deliciousness.

Three-Pepper Sauce

1/4 cup (60 ml) olive oil
1 red onion, thinly sliced
2 each red, green, and yellow bell peppers (capsicums),
cored, seeded, and cut into thin strips
4 anchovy fillets, rinsed and finely chopped
1-3 cloves garlic, finely chopped
1/4 cup (60 ml) chopped fresh parsley
Salt and freshly ground pepper to taste

Heat the oil in a large skillet over moderate heat and saute the onion
until tender and lightly browned, about 10 minutes. Add the peppers
and saute 5 minutes. Add the anchovies and garlic and saute 5
minutes. Remove from the heat and stir in the parsley, salt, and
pepper. Serve over fettuccine, spaghetti, or other long, narrow
noodles. Serves 4 to 6.
