This classic Mexican dish is so simple and delicious you'll want to
keep the recipe handy for whenever you need a quick and easy
appetizer, cold side dish, or salad.

Tomatoes Stuffed with Guacamole (Jitomates Rellenos de Guacamole)

4-6 medium tomatoes
Salt and freshly ground pepper to taste
2-3 avocados, peeled, pitted, and mashed
2 Tbs (30 ml) finely chopped onion
2 Tbs (30 ml) chopped cilantro (coriander leaves)
1 tsp (5 ml) fresh lime or lemon juice
1-2 jalapeno peppers, seeded and finely chopped (optional)
Lettuce leaves for garnish (optional)

Cut a slice off the top of the tomatoes and scoop out the insides to
leave a thick shell. Sprinkle the inside with salt and allow to drain
upside down for 15 minutes. Mix together the avocado, onion,
cilantro, lime juice, optional jalapeno, salt, and pepper and stuff
the tomatoes with the mixture. Serve chilled or at room temperature
on a bed of lettuce leaves if desired. Serves 4 to 6.
