Star fruits, also known as carambolas, have become more widely
available in the US in recent years. This fruit, which may be yellow
or white, is recognizable because of its unique shape with five
deep longitudinal ribs that form a star shape when sliced. The
fruit has inconspicuous seeds and can be eaten as is, with no
seeding or peeling required.
Star Fruit and Avocado Salad
2 ripe avocados
4 star fruits (carambolas), thinly sliced
Salt and freshly ground pepper to taste
The juice of 1 orange
Cut the avocados in half lengthwise and remove the pit. Cut into
thin strips and peel the skin off. Arrange the avocado slices on
individual salad plates and arrange the star fruit slices on top.
Season with salt and pepper and drizzle with the orange juice.
Serves 4 to 6.
