A Scotsman, an Englishman, and an Irishman were sitting in a pub
discussing the best pubs around. The Englishman says, "There's a pub
in the West Midlands where the landlord buys you a drink for every
that you buy."

The Scot is not impressed and says, ''That's nothing! In the
Highlands every time you buy a drink the landlord buys you five." At
this point the Englishman is fairly impressed.

The Irishman, totally unimpressed, says ''That's's nothing. In Dublin
there's this pub where the landlord buys your drinks all night, and
then when the bar shuts he takes you into a room and makes love to
you."

The Scot and Englishman are well impressed and ask if the Irishman
goes there a lot. He replies ''No, but my sister does."

            TODAY'S RECIPE

This classic chocolate tart will please any chocolate lover, and the
marble effect on the top will impress everyone.

Chocolate Truffle Tart

5 oz (5 squares, 140 g) bittersweet chocolate, chopped
1/2 cup (125 ml) butter
1 1/2 cups (375 ml) sugar
3/4 cup (180 ml) all-purpose flour
4 eggs, beaten

For the glaze:
1 oz (1 square, 28 g) unsweetened chocolate, chopped
1 tsp (5 ml) butter
1 cup (250 ml) confectioner's sugar
5 tsp (25 ml) boiling water plus additional
2 oz (2 squares, 56 g) white chocolate, chopped
1 Tbs (15 ml) heavy cream

Whipped cream for garnish

Combine the chocolate and butter in a saucepan and melt over hot water
or in the microwave. Mix the sugar, flour, and eggs in a mixing bowl
until combined. Stir in the chocolate mixture and pour into a greased
11-inch (28 cm) tart pan. Bake in a preheated 350F (180C) oven for 30
to 35 minutes, until set around the edge. Cool completely on a wire
rack.

For the glaze, combine the chocolate and butter in a saucepan and melt
over hot water or in the microwave. Stir in the sugar and water,
adding additional hot water 1/2 teaspoon (2 ml) at a time, until thin
enough to drizzle. Spread over the tart. Combine the white chocolate
and cream in a saucepan and melt over hot water or in the microwave.
Drizzle over the dark chocolate and drag the tip of a toothpick
through the glaze to make a marbled design. Let stand until the glaze
is set. Garnish with whipped cream. Serves 8 to 12.
