TODAY'S RECIPE

This week I have put together a small collection of incredibly easy
recipes for party foods in the hope that maybe someone will throw a
party and invite me over. These dishes are so ridiculously simple
that I won't even bother with quantities for most of them. Here is
the lineup:
Monday's "Extra"
Blue Chips
Tuesday's "Extra"
Quick Nachos
Wednesday's "Extra"
Pepperoni Chips
Thursday's "Extra"
Baked Camembert
Friday's "Extra"
A Trio of Sweets
One of my favorite restaurants is the Buckhead Diner in Atlanta, and
this is a dish they have offered since the day they opened their doors
sometime in the mid-'80s. Their version involves Maytag blue cheese
sprinkled over fresh homemade potato chips still hot from the fryer,
but my version is infinitely easier and almost as good. You can make
these in one big batch and serve them to a crowd, or you can make
smaller individual portions for an unusual - and delicious - appetizer
or first course.
Blue Chips
Potato chips
Crumbled blue cheese
Arrange the potato chips on a heatproof platter or individual serving
plates and sprinkle with blue cheese. Heat in a preheated 350F (180C)
oven until the cheese melts, 5 to 8 minutes, or cook in a microwave
oven for about 30 seconds. Serve immediately.
