By following the simple advice I read in an article, I have finally
found inner peace. The article read:
"The way to achieve inner peace is to finish all the things you've
started."
So I looked around the house to see all the things I started and
hadn't finished, and before leaving the house this morning, I finished
off a bottle of red wine, a bottle of white wine, the Bailey's,
Kahlua, and Tequila, some cheesecake, and a box of chocolates. You
have no idea how ecstatic I feel! You may share this with those you
feel are in need of Inner Peace.

Publication of Simon P. Gruntfutter's gripping history of the
Recitopia Empire inspired several readers to write asking about the
beginnings of their favorite recipezine, so this week I will publish
the recipes from very first week of the ezine's existence, way back in
January of 1998. I will reproduce the first five edition in their
entirety in this space so we can all marvel at how the darned thing
has changed over the years. Here is the lineup:

Cheese Balls Florentine
Tuesday's Soup or Salad
Tomato Consomme

Below is the entire first edition of everyone's favorite recipezine
which was delivered to about 25 friends and family on January 5, 1998.
My how we've grown.
This week's recipes feature some of the Chef's favorite winter comfort
foods. Enjoy!
Cheese Balls Florentine
1 cup cooked spinach, drained and chopped very fine
2 eggs, beaten
2 cups bread crumbs
1 small shallot, chopped fine
1/2 cup grated cheese
Salt and pepper to taste
Combine all ingredients except for 1/2 cup bread crumbs. Form mixture
into 1 to 1 1/2 inch balls and coat with additional bread crumbs.
Deep fry in 375 degree oil until brown and crisp. Serve with marinara
sauce or your favorite mustard.
