My eight-year-old daughter Deanna likes to invent things out of the
strangest items. One day, I'd found that she'd invented a pull toy
out of a box and a rope. She asked, "Mom, will you pull me around in
my A-7-Purple-Beef-Paddles?" I asked her where she came up with a
name like that. She said, "Easy. My favorite letter is A, my
favorite number is 7, and my favorite color is purple." I told her
that so far it sounded logical, but where did she come up with the
"Beef Paddles" part? She then pointed to the side of the box, which
read "BEEF PATTIES." She thought that the "I" looked like an "L", and
so thought it was Pattles.

TODAY'S RECIPE

No one needs to tell me how difficult it is to cook for one. Most
recipes (mine included) are designed for more than one, and shopping
for one is almost impossible. When was the last time you saw a
package of one pork chop, or two chicken pieces, for example? Then,
even if you have the right recipe and the right amount of ingredients,
do you really want to go to very much trouble to cook just for
yourself? I know the answer to that one: sometimes, but not all the
time. This week I try to even the balance with a small collection of
quick and easy dishes designed for the lone diner. Here is the menu:
Monday's Starter
Guacamole for One
Tuesday's Soup or Salad
Artichoke Soup for One
Wednesday's Side Dish
Lemon-Glazed Carrots for One
Thursday's Entree
Chicken-Fried Steak for One
Friday's Dessert
"Dutch Baby" Pancake for One
As with several of this week's recipes, this dish can become a quick
and easy one-dish meal by adjusting the quantities to suit your
appetite.
Guacamole for One
1 small ripe avocado, peeled and pitted
1 small tomato, seeded and finely chopped
1 small garlic clove, crushed
1 Tbs (15 ml) finely chopped onion
1 tsp (5 ml) lemon or lime juice
Hot sauce to taste
Salt and freshly ground pepper to taste
Mash the avocado with a fork in a small bowl. Stir in the remaining
ingredients. Serve with tortilla chips. Serves 1.
