Let's hope the this one from reader Fran Ng falls into the "Not True
Food Funny" category.

Having moved into his first apartment, our son invited my husband and
me for a visit. As we walked in, our son asked if we'd like a cold
drink. Mentally patting myself on the back for teaching him to be
such a gracious host, I said, "Yes, what do you have?"

He walked over to the refrigerator, opened the door, studied the
contents, and then replied, "I have pickle juice or water."

Although the winter of 2001 may go down as "The Winter that Never
Happened" in your book of memories, it is now officially spring in the
northern hemisphere and time got get out of doors for some picnics
with friend and family. My readers south of the equator can simply
rename this "An Autumn Picnic." Here is the menu:

All of the recipes I offer this week are intended to be eaten chilled
or at room (outdoor?) temperature, ideal for packing in a cooler and
taking along for a picnic by the shore, in the mountains, or in your
own back yard. This crustless pie is quick, easy, and foolproof even
for the pie-crust-challenged.

Zucchini and Sausage Pie

2 Tbs (30 ml) olive oil
2 cups (500 ml) shredded zucchini
1 medium onion, chopped
1/2 lb (225 g) bulk sausage
2 cups (500 ml) grated Swiss cheese
1 cup (250 ml) all-purpose flour
1 cup (250 ml) milk
1/2 cup (125 ml) cream or half-and-half
2 Tbs (30 ml) freshly grated Parmesan cheese
2 eggs, lightly beaten
A grating of fresh nutmeg
Salt and freshly ground pepper to taste

Heat the oil in a large skillet over moderate heat and saute the
zucchini and onion until tender, about 5 minutes. Remove from the
skillet and place in a large mixing bowl. Brown the sausage in the
same skillet and drain on paper towels. Add the sausage to the bowl
along with the remaining ingredients and mix well. Pour into a
greased 9-inch (23 cm) square baking dish and bake in a preheated 400F
(200C) oven for 40 minutes, or until the tip of a knife inserted in
the center comes out clean. Cool in the baking pan and cut into
squares to serve. Serve chilled or at room temperature. Serves 8 to 10.
