Reader Donna Bobo didn't represent this as a true food funny, and many
people have sent it in, but it wouldn't surprise me at all if this has
actually happened more than once:
My daughter went to a local Taco Bell and ordered a taco. She asked
the individual behind the counter for "minimal lettuce." He said he
was sorry, but they only had iceberg lettuce.

It's time to revisit one of my favorite cuisines with another trip to
Mexico. Many Americans think of the Tex-Mex style as the only type of
Mexican cooking, and I hope to demonstrate over the next week that
there are many interesting dishes from other regions of that large and
culinarily diverse country.
In the Mexican culinary lexicon, a "tostada" is simply a crisp-fried
tortilla topped with any of a wide variety of ingredients. They are
frequently served as a snack, and many home cooks employ them as a way
to use up leftovers. Here is one of the more elegant variations:
Tostadas de Camaron (Shrimp Tostadas)
Vegetable oil for frying
4 - 6 six-inch (15 cm) corn tortillas
1 Tbs (15 ml) butter
1 medium onion, finely chopped
1 large tomato, seeded and finely chopped
1/2 lb (225 g) peeled shrimp, chopped
Salt and freshly ground pepper to taste
1/4 cup (60 ml) freshly grated Parmesan cheese
1 - 2 cups (250 - 500 ml) finely chopped lettuce,
lightly dressed with oil and vinegar
Heat about 1/2 inch (1 cm) of vegetable oil in a small skillet over
moderate heat and fry the tortillas, one at a time, until crisp.
Drain on paper towels. Heat the butter in another skillet over
moderate heat and saute the onion until tender but not brown, about 5
minutes. Add the tomato and saute for 3 to 4 minutes. Add the shrimp
and saute until the shrimp are pink and firm to the touch, about 3
minutes. Season with salt and pepper and cover the tostadas with the
shrimp mixture. Top with the grated Parmesan and the dressed lettuce.
Serves 4 to 6 as an appetizer.
