The briefest glimpse at this week's lineup would give away the theme
for this week, which celebrates the flavors of fresh herbs.

Even though this is a modern creation, it has the flavors of many
ancient dishes from the Mediterranean.

Herbed Goat Cheese Spread

8 oz (225 g) mild goat cheese (chevre)
1/4 cup (60 ml) sour cream
Finely grated zest of 1 orange
1/4 cup (60 ml) coarsely chopped green olives
1 scallion, green and white part, finely chopped
1 tsp (5 ml) finely chopped fresh rosemary
Salt and freshly ground pepper to taste

Mash the goat cheese, sour cream, and orange zest together. Gently
fold in the remaining ingredients. Refrigerate for at least 1 hour.
Serve with crackers, toast, or raw vegetables. Serves 6 to 8.
