Here's one from my fellow Virgin Islander, Mervin Baer of St. Croix:

A man sat at the counter as the waiter set down the doughnut and cup
of coffee. As the waiter turned to leave the man remarked, "It looks
like rain."

The waiter fired back, "It tastes like coffee, don't it?"

The title of this British recipe refers not to the difficulty in
making it (it's really quite easy), but to the fact that it makes its
own crust, filling, and topping.

Impossible Pie

4 eggs
4 Tbs (60 ml) unsalted butter at room temperature
1 cup (250 ml) sugar
1/2 cup (125 ml) self-rising flour
1/4 tsp (1 ml) salt
2 cups (500 ml) milk
1 cup (250 ml) shredded unsweetened coconut
1 tsp (5 ml) vanilla extract

Combine all ingredients in an electric blender or food processor and
blend just until thoroughly mixed. Pour into a buttered pie pan and
bake in a preheated 350F (180C) oven for 1 hour. Allow to cool and
serve chilled or at room temperature. Serves 4 to 6.
