Reader Marjorie Marino was the first of many to send me this food
funny:

There once was this guy that got a dirty old lamp for his birthday.
He cleaned it up and 'POOF' out popped a genie. "I shall give you
three wishes. You may have anything you like."

So the guys thinks for a minute and says. "I would like a billion
dollars."

"You shall have it." the genie grants him the wish. "Anything else?"

The guy thinks for a while. "I would like a VW Bug with A/C, power
locks, power windows, you know the works."

"Your wish is my command. What is your last wish?"

"Hmm. I think I'll save it for a rainy day."

"OK, suit yourself." says the genie

So the guy gets in his new car and goes for a drive to show all his
friends. He turns on the radio. There is a very familiar commercial
on. The guy starts singing to it. "I wish I was an Oscar Meyer
Wiener."

My classically trained readers will recognize this dough as pate a
choux, which is normally baked into such pastries as cream puffs and
eclairs. The Portuguese turn it into little donut-like confections,
and very appropriately call them "sonhos," or "dreams."

"Dreams" (Sonhos)

1/4 lb (100 g) butter
2 Tbs (30 ml) sugar
1/4 tsp (1 ml) salt
1 cup (250 ml) water
1 cup (250 ml) sifted all-purpose flour
4 large eggs
Vegetable oil for deep frying
Cinnamon sugar (1/2 cup (125 ml) sugar mixed with
2 tsp (10 ml) ground cinnamon)

Bring the butter, sugar, salt, and water to a boil in a small saucepan
over high heat. Remove from the heat and add all the flour at once.
Beat vigorously with a wooden spoon until the mixture comes together
in a ball. Add the eggs one at a time, beating vigorously until each
egg is absorbed by the dough before adding the next. The dough will
give the appearance that it is separating, but beating will
incorporate the eggs. Heat the vegetable oil to 375F (190C) and
carefully drop the dough in rounded tablespoonfuls. Do not fry more
than 3 or 4 at a time, and try to keep the temperature of the oil as
close to 375F (190C) as possible. Fry the pastries for 3 to 4
minutes, turning as necessary, until golden brown on all sides. Drain
on paper towels and sprinkle with cinnamon sugar while still hot.
Makes about 2 dozen; allow 3 to 4 per serving.
