::::::::::::::::::::::::::::: FOOD FUNNY :::::::::::::::::::::::::::::
Thanks to reader Terry Leon of Georgetown, Ontario for today's food
funny.
A friend hosted a dinner party for people from work and everyone was
encouraged to bring their children. All during the sit-down dinner
one co-worker's three year old girl stared at the man sitting across
from her. The girl could hardly eat her food for staring. The man
checked his tie, felt his face for food, patted his hair in place but
nothing stopped her from staring at him. He tried his best to just
ignore her but finally it was too much for him. He asked her "Why are
you staring at me?" Everyone at the table had noticed her behavior
and the table went quiet for her response. The little girl said "I
want to see how you drink like a fish."
::::::::::::::::::::::::::: TODAY'S RECIPE ::::::::::::::::::::::::::
I remember as a child being skeptical when my mother served me my
first potato pancake, but one bite convinced me they would become a
life-long favorite. If you plan to serve these with tomorrow's pot
roast I would recommend omitting the potatoes from that recipe.
Unless of course you are a confirmed potato lover like I am.
Potato Pancakes
2 cups (500 ml) peeled, grated potatoes
3 eggs, beaten
3 Tbs (45 ml) chopped chives
1 Tbs (15 ml) all-purpose flour
Salt and freshly ground pepper to taste
Vegetable oil for frying
Wrap the grated potatoes in a clean dish towel and wring tightly to
remove as much moisture as possible. In a large mixing bowl combine
the potatoes, eggs, chives, flour, salt, and pepper, mixing well.
Heat 1/4 inch (5 mm) oil in a heavy skillet over high heat and place
spoonfuls of the potato mixture in the hot oil, shaping them into
patties as they cook. Turn when the bottom has browned and brown the
other side. Drain on paper towels and serve immediately. Makes about
twelve 3-inch pancakes, to serve 4 to 6.
