I live in suburban Atlanta. However when I first moved to my
community (Redan) it was quiet and relatively undeveloped. While
driving past some of the then pristine farm and pasturelands I
happened to look out across one of the fields where I saw a farmer
working on his tractor. Not very far from where he was working, I saw
a remarkable sight. There was a pig out rooting around in the
field... and the pig only had two legs!

As I was astounded by the ability demonstrated by this animal, I
stopped my pickup and called out to the farmer. He crossed the field
and approached me at the fence. I inquired as to how the pig was able
to function with only two legs. The farmer replied that yes, that was
an unusual animal and that he wanted to tell me how that the pig was
responsible for saving the lives of his entire family. One night
after they had gone to bed, the wood fire in the stove which he
thought had been properly banked, flared and threw out a spark. This
caught a kitchen rug afire and the flames began to spread. The pig
apparently sensed the danger and began squealing and throwing it's
body up against the side of the house. This woke the farmer who then
promptly extinguished the flames, "....thereby, saving my life and the
lives of my wife and kids", stated the farmer. But the pig's only got
two legs, I replied.

"Let me tell you something else about that pig" said the farmer. He
then proceed to tell me about the time he was out plowing with his
tractor when he hit a large sinkhole, turning the tractor over and
pinning him. As the gas began to leak from the tank, he began to
panic as the still running engine could ignite the gasoline and he
would be history. He began to holler for help and the pig came in
response. The pig began to root around and dug enough of a depression
that the farmer with the aid of the pig pulling on his overalls was
able to extricate himself from beneath the tractor and he and the pig
were able to get away before the tractor burst into flames.
"....thereby saving my life for a second time", stated the farmer.

"Yeah, I get the picture," I said, "but how is it that the pig's only
got two legs?"

He replied, "You don't eat a valuable pig like that all at once!"

Mushrooms with Lemon Juice and Soy Sauce

2 Tbs (30 ml) lemon juice
1 Tbs (15 ml) soy sauce
Freshly ground pepper to taste
8 oz (250 g) fresh mushrooms, sliced
Lettuce leaves for garnish

Combine the lemon juice, soy sauce, and pepper in a bowl. Toss the
sliced mushrooms in the dressing and serve immediately on a bed of
lettuce. Serves 4 to 6.
