A father took his little girl to see Star Wars. He noticed she
alternated between excitement and puzzlement. After the movie he
asked her what she thought of it. She replied "Well Dad, I liked it a
lot, except I couldn't understand a word that big hairy guy said." He
laughed and said, "Oh, I know why! That was a Wookie, and that's just
the way the Wookie mumbles!"

The Virgin Islands have at various times flown the Danish, French,
British, and U.S. flags, creating a varied and diverse cultural
heritage. Combine that with Spanish influence from nearby Puerto
Rico, the contributions of slave laborers from Africa, and a wealth of
indigenous ingredients, and you have a kaleidoscope of culinary
tradition. This week I offer up some traditional Virgin Island
favorites.
The only explanation I was able to uncover for the name of this dish
is that it is frequently served at outdoor barbecues, where it is
often spread on hamburgers. However the name came about, it is a
local variation on the guacamole theme and makes a crowd-pleasing
summer party dip.
Barbecue Spread
Flesh of 2 to 3 ripe avocados, mashed
3 Tbs (45 ml) finely chopped onion
3 Tbs (45 ml) mayonnaise
2 Tbs (30 ml) ketchup
1 Tbs (15 ml) lime juice
1 Jalapeno pepper, seeded, finely chopped
Salt and freshly ground pepper to taste
Tabasco sauce to taste
Combine all ingredients in a small bowl and stir to combine
thoroughly. Serve with chips, crackers, or pita bread. Serves 6 to
8.
