My Wise Old Grandpapa by Wilbur G. Howcroft
When I was but a little chap
My grandpapa said to me,
'You'll need to know your manners, son
When you go out to tea.
'Remove the shells from hard-boiled eggs,
Make sure your hat's on straight,
Pour lots of honey on your peas
To keep them on the plate.
'Blow daintily upon your tea
To cool it to your taste,
And always pick bones thoroughly,
With due regard for waste.
'Be heedful of your partners' needs,
Attend their every wish;
When passing jelly, cream or jam,
Make sure they're in the dish.
'When eating figs or coconuts,
To show you are refined,
Genteely gnaw the centres out
And throw away the rind.
'If you should accidentally gulp
Some coffee while it's hot,
Just raise the lid politely and
Replace it in the pot.
'Don't butter ice cream when it's warm,
Or drink soup through a straw,'

This is a simple preparation that shows up frequently on Vietnamese
tables. It is actually used more as a seasoning or condiment rather
than a salad. In fact, a little of this is always added to nuoc cham
when serving spring rolls.
Carrot Salad
1 large carrot, peeled and cut into matchstick
size pieces or shredded in a food processor
1/2 cup (125 ml) water
1 tsp vinegar
1 tsp sugar
A pinch of salt
Combine all the ingredients in a small bowl and stir to combine.
Allow to marinate for at least 15 minutes, or as much 24 hours. Drain
and discard the liquid before serving. Makes about 1/2 cup (125 ml)
to serve 4 to 6.
