Today's recipe is as easy as they come, perfect for young cooks who
want to cook a Mother's Day dinner fit for a queen, or even a mom.
Mom may also want to keep this recipe handy, because sometimes even
mothers need a quick and easy dinner for the family.

Chutney Chicken

4 to 6 boneless, skinless chicken breast halves
1 9 oz (250 g) jar mango chutney
1 scallion (spring onion, green onion) both green
and white parts, thinly sliced

Preheat the oven to 375F (190C). Place the chicken breast halves in
an oven-proof baking dish just big enough to hold them without
touching each other. Wash your hands after touching the chicken
because raw chicken can have germs that can make you sick. Using a
spoon, put the chutney on top of the chicken breasts. Bake in the
center of the oven for 20 minutes. Sprinkle with the sliced scallion
just before serving. Serves 4 to 6.
