Chef Carol's dessert is one I know will please you, if the response I
have received from other fruit salads is anything to go by. Chef
Carols says "The taste-tempting secret of this delightful dessert is
that the strawberries have been marinated in orange juice and Curacao
or Cointreau." If alcohol isn't your thing, then just omit it from
this recipe, and you'll still get rave reviews.

Chef Carol Shipman's Strawberries Romanoff

1+1/2 pints (3 cups, 750 ml) ripe strawberries
3 Tbs (45 ml) sugar
2 Tbs (30 ml) Curacao, Cointreau,
or other orange flavored liqueur
Juice and grated peel of one orange
1 cup (250 ml) whipping cream
4 Tbs (60 ml) sugar, or to taste

Rinse and hull the strawberries. Combine in bowl with 3 tablespoons
(45 ml) sugar, Curacao, orange juice and grated peel. Pour over
strawberries and chill for several hours. Beat the cream and 4
tablespoons (60 ml) sugar until soft peaks are formed. Alternate
layers of strawberries and sweetened whipped cream in tall glasses for
showy results. Serves 6 to 8.
