Beef Taco Salad

As warmer weather moves in, don't be surprised if this big salad with
taco taste appears on your dinner table more and more often. It's
family-friendly, fast and fabulous!

Beef Taco Salad
from Campbell's Kitchen

Prep Time: 20 min.
Cook Time: 15 min.

1 pound ground beef
2 tablespoons chili powder
1 can (10 3/4 ounces) Campbell'sŪ Condensed Tomato Soup
8 cups mixed salad greens torn into bite-sized pieces
2 cups tortilla chips
Chopped tomato
Sliced green onion
Shredded Cheddar cheese
Sliced pitted ripe olives

1. Cook the beef and chili powder in a 10-inch skillet over medium-high
heat until the beef is well browned, stirring often to separate meat.
Pour off any fat.

2. Stir the soup in the skillet and cook until the mixture is hot and
bubbling.

3. Place the greens and chips onto a platter. Spoon the beef mixture
over the chips. Top with the tomato, onions, cheese and olives.
Makes: 4 servings (about 2 1/2 cups each).

                              To get the kids involved in dinner (and encourage them to eat
more vegetables!), place all the toppings in small bowls and let them
build their own salad, picking and choosing what they want to add.
