Quick Turkey Stir-Fry

Looking for a different option for yesterday's leftover turkey? Why not
try this stir-fry with hints of ginger and soy sauce?

Quick Turkey Stir-Fry
from Campbell's Kitchen

Prep Time: 15 min.
Cook Time: 10 min.

1 tablespoon vegetable oil
3 medium carrots, sliced (about 1 1/2 cups)
1/4 teaspoon ground ginger
1 can (10 1/2 ounces) Campbell'sŪ Turkey Gravy
1 tablespoon soy sauce
2 green onions, sliced (about 1/4 cup)
1 1/2 cups cubed cooked turkey
2 cups instant white rice, prepared according to package directions

1. Heat the oil in a 10-inch skillet over medium-high heat. Add the
carrots and ginger and stir-fry until the carrots are tender-crisp.

2. Stir the gravy, soy sauce, onions and turkey in the skillet and cook
until the mixture is hot and bubbling. Serve the turkey mixture over
the rice.
Makes: 4 servings (about 1 3/4 cups each).

                              This recipe works just as well with leftover chicken or pork as
it does with turkey. Feel free to vary the vegetables too - try strips
of bell pepper, sliced celery, half-moons of zucchini or broccoli florets.
