Papaya Shrimp Salad

Cool and refreshing, this speedy salad is not only satisfying but easy
on fat and calories too! It's a perfect blend of crisp, sweet, savory
and spicy.

Papaya Shrimp Salad
from Campbell's Kitchen

Prep Time: 15 min.

1 pound cooked large shrimp, peeled and deveined
1 papaya, peeled, seeded and diced
1 cup whole kernel corn
4 green onions, chopped (about 1/2 cup)
1 cup PaceŽ Picante Sauce
1 tablespoon lemon *or* lime juice
Mixed salad greens

1. Place the shrimp, papaya, corn and onions into a large bowl. Add
the picante sauce and lemon juice and toss to coat.

2. Serve the shrimp mixture over the salad greens.

Makes: 4 servings (1 1/2 cups each).

Kitchen Clip Papaya is super in this salad but if you can't find
one at the grocery store, use a mango instead. Choose both papayas and
mangos by pressing them lightly - their flesh should give slightly but
not be super hard or mushy.
