tasty and ready in a snap!
Italian Fish Fillets
from Campbell's Kitchen
Prep Time: 10 min. Bake Time: 10 min.
2 slices Pepperidge Farm(R) White Sandwich Bread, torn into pieces
1/3 cup shredded Parmesan cheese
1 clove garlic
1/2 tsp. dried thyme leaves, crushed
1/8 tsp. ground black pepper
2 tbsp. olive oil
8 fish fillets (3- to 4-oz. each ) tilapia or other firm white fish
fillets* (about 2 lb.)
1 egg, beaten
Directions:
Place bread, cheese, garlic, thyme and black pepper in blender or food
processor. Cover and blend until fine crumbs form. Slowly add olive oil
and blend until moistened.
Arrange fish fillets in large shallow roasting pan. Brush with egg.
Divide bread crumb mixture evenly over fillets.
Bake at 400 degrees F. for 10 min. or until fish flakes easily when
tested with a fork and crumb topping is golden.
Tip : *cod, haddock or halibut Serves 8.
Kitchen Clip:
Serve with steamed green beans and some fresh fruit for dessert.
