Citrus Balsamic Salmon

Fish becomes a family favorite when you serve this succulent salmon
topped with a mouthwatering sauce.

Citrus Balsamic Salmon
from Campbell's Kitchen

Prep/Cook Time: 25 min.

8 salmon fillets, 3/4" thick (about 1 1/2 lb.)
3 tbsp. olive oil
1 3/4 cups Swanson(R) Chicken Broth
3 tbsp. balsamic vinegar
1 1/2 tbsp. cornstarch
1 tbsp. orange juice
1 tbsp. packed brown sugar
1 tsp. grated orange peel
Orange slices

Directions:
 SEASON salmon with salt and pepper. Place salmon in 2-qt. shallow
baking dish. Drizzle with olive oil. Bake at 350 degreesF. for 15 min.
or until fish flakes easily with fork.
 BLEND broth, balsamic vinegar, cornstarch, orange juice, brown sugar
and orange peel in medium saucepan. Cook and stir over high heat until
mixture boils and thickens; boil for 1 min.
 ARRANGE salmon on serving platter; garnish with orange slices. Serve
with citrus sauce. Serves 8.
 TIP: Salmon and sauce may be refrigerated separately and served chilled.
 Swanson Kitchen Tip: This recipe is also great using Swanson(R) Natural
Goodness(TM) Chicken Broth or Certified Organic Chicken Broth in place
of regular chicken broth.

Kitchen Clip:
Serve with white rice and steamed green beans.
