Some days you don't have the time or the money to go out to eat, but
this quick skillet tastes like it was prepared by a pro!
Quick Skillet Chicken & Macaroni Parmesan
from Campbell's Kitchen
1 jar (1 pound 10 ounces) Prego® Traditional Italian Sauce
1/4 cup grated Parmesan cheese
3 cups cubed cooked chicken
1 1/2 cups uncooked elbow macaroni, cooked and drained
1 1/2 cups shredded mozzarella cheese
Directions:
Pour sauce, 3 tablespoons Parmesan cheese , chicken and macaroni into
skillet. Heat to a boil. Reduce heat to medium. Cover and cook for 10
minutes or until mixture is hot and bubbling, stirring occasionally.
Sprinkle with mozzarella cheese and remaining Parmesan cheese. Let stand
for 5 minutes or until cheese melts.
Easy Substitution: Use 1 1/2 pounds skinless, boneless chicken breasts
, cut into cubes for cooked chicken. Heat 1 tablespoon olive oil in
12-inch skillet over medium-high heat. Add chicken in 2 batches and cook
until it's well browned, stirring often. Continue to cook proceeding as
directed in step 1 above.
Kitchen Clip:
You can use leftover chicken or store-bought rotisserie chicken for this
dish.
