Prego Good-For-You Stuffed Peppers

Colorful and packed with flavor, tonight's supper is sure to become a
"most-requested recipe".

Prego Good-For-You Stuffed Peppers
from Campbell's Kitchen

Prep Time: 20 min. - Bake Time: 45 min.

1/2 cup uncooked instant brown rice
1 lb. extra lean ground beef
1 jar (1 lb. 10 oz.) Prego(R) Heart Smart Traditional Italian Sauce
6 medium green peppers
1 cup fat-free shredded mozzarella cheese

Directions:
COOK rice without salt or butter according to package directions.
COOK beef in 10” skillet over medium-high heat until beef is well
browned, stirring to break up meat. Pour off fat. Stir 2 cups of sauce
and rice into skillet.
CUT each pepper in half lengthwise. Discard seeds and white membranes.
Place pepper shells in a 17 x 11” roasting pan or the bottom of a
broiler pan.
SPOON beef mixture into pepper shells. Pour remaining sauce over
peppers. Cover.
BAKE at 400 degreesF. for 45 min. or until peppers are tender. Top with
cheese. Serves 6.

Kitchen Clip:
You can substitute ground turkey or ground chicken for the ground beef,
but just be sure to brown the meat in a little oil so that it doesn't
stick to the pan.
