Italian Marinated Chicken
from Campbell's Kitchen
Marinating Time: 30 min. - Cook Time: 15 min.
1 3/4 cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or
Certified Organic)
1 tbsp. canned diced tomatoes, drained
1 tsp. grated Parmesan cheese
1/2 tsp. Italian seasoning, crushed
1/4 tsp. garlic powder
6 skinless, boneless chicken breast halves
Directions:
MIX broth, tomatoes, cheese, Italian seasoning and garlic powder in a
shallow nonmetallic dish. Add chicken and turn to coat. Cover and
refrigerate for 30 min. Remove chicken from broth mixture.
GRILL or broil chicken for 15 min. or until done, turning and brushing
often with broth mixture. Discard remaining broth mixture. Serves 6.
TIP: Note: Swanson(R) Seasoned Chicken Broth with Italian Herbs is no
longer available. Campbell's Kitchen has modified this recipe with
chicken broth to deliver the same great dish you enjoyed.
Kitchen Clip:
Serve with a tossed salad dressed with balsamic vinaigrette. To make the
vinaigrette, mix 3 tbsp. balsamic vinegar, 2 tsp. Dijon mustard, and 1
small clove garlic, minced. Slowly whisk in 3/4 cup olive oil, and salt
and pepper to taste.
