Dijon-Herb Pork Roast

This moist and tender pork roast is elegant enough for company, but easy
enough for everyday!

Dijon-Herb Pork Roast
from Campbell's Kitchen

Prep Time: 10 min. Cook Time: 1 hr. 45 min. Stand Time: 10 min.

1 tsp. minced fresh rosemary leaves OR 1/4 tsp. dried rosemary leaves,
crushed
1 tsp. minced fresh parsley OR 1/4 tsp. dried parsley flakes
1 tsp. minced fresh thyme leaves OR 1/4 tsp. dried thyme leaves, crushed
 2 1/2- to 3-lb. boneless pork loin roast
1/2 cup red currant jelly
1/4 cup Dijon-style mustard
1 tbsp. cornstarch
1 cup Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or
Certified Organic)
1/2 cup fresh whole-wheat bread crumbs
Vegetable cooking spray

Directions:
 MIX rosemary, parsley and thyme. Cut small slits into surface of roast
and stuff herb mixture into slits. Place in roasting pan. Roast at 325
degreesF. for 1 hr.
 MIX jelly, mustard, cornstarch and broth in saucepan. Cook and stir
until mixture boils and thickens. Spoon about 1/4 cup broth mixture over
roast. Sprinkle with bread crumbs and spray with cooking spray.
 ROAST 45 min. or until done. Let stand 10 min. Serve with remaining
broth mixture. Serves 8.

Kitchen Clip:
Slice leftover pork roast and use to make delicious sandwiches for the
next day's lunch.
