This skillet supper is a nice introduction to the flavors of the
Southwest. It will disappear almost as soon as it is ready!
Southwest Beef Skillet Dinner
from Campbell's Kitchen
Prep Time: 25 min. - Cook Time: 1 hr. 15 min.
1 lb. boneless beef sirloin steak OR top round steak
2 tbsp. all-purpose flour
2 tbsp. vegetable oil
3/4 cup chopped onions
2 cloves garlic, minced
1 can (10 3/4 oz.) Campbell's(R) Condensed Creamy Ranchero Tomato Soup
1 cup water
1/4 tsp. chili powder
1 cup frozen whole kernel corn
4 cups cooked cholesterol-free wide noodle-style pasta
Directions:
SLICE beef into very thin strips. Toss beef with flour to coat.
HEAT 1 tbsp. oil in saucepot over medium-high heat. Add beef and cook
until browned, stirring often. Remove beef.
ADD remaining oil. Add onions and garlic. Cook over medium heat 1 min.
ADD soup, water and chili powder. Heat to a boil. Return beef to
saucepot. Cover and cook over low heat 1 hr.
ADD corn and heat through. Serve over pasta. Serves 4.
