South of the Border Chicken
from Campbell's Kitchen
Prep/Cook Time: 20 min.
1 tbsp. butter or margarine
4 boneless chicken breast halves
1 can (10 3/4 oz.) Campbell's(R) Condensed Broccoli Cheese Soup (regular
or 98% Fat Free)
1/3 cup milk
4 cups hot cooked rice
Pace(R) Chunky Salsa
Sour cream
1 small avocado, sliced (optional)
Directions:
HEAT butter in skillet. Add chicken and cook until browned.
ADD soup and milk and heat to a boil. Cover and cook over low heat 5
min. or until done. Serve with rice. Top with salsa, sour cream and
avocado. Serves 4.
Kitchen Clip:
Boost the greens in this dish, if desired, by adding steamed broccoli
with the soup.
