Fragrant and delicious--what more could anyone want from supper tonight?

Mediterranean Chicken & Rice Bake
from Campbell's Kitchen

Prep Time: 10 min. - Bake Time: 50 min.

1 3/4 cups Swanson(R) Chicken Broth
1/4 cup chopped fresh parsley
1/4 cup sliced pitted ripe olives
1 tbsp. lemon juice
1/4 tsp. ground black pepper
1 can (about 14 1/2 oz.) stewed tomatoes
1 1/4 cups uncooked regular long-grain white rice
6 boneless chicken breast halves
1/2 tsp. garlic powder
 Paprika

Directions:
 MIX broth, parsley, olives, lemon juice, black pepper, tomatoes and
rice in 3-qt. shallow baking dish. Cover.
 BAKE at 375°F. for 20 min.
 TOP with chicken. Sprinkle with garlic powder and paprika.
 BAKE 30 min. or until chicken and rice are done. Serves 6.
 Swanson Kitchen Tip: This recipe is also great using Swanson(R) Natural
Goodness(TM) or Certified Organic Chicken Broth in place of the regular
chicken broth.

Kitchen Clip:
Try a medley of olives---green and black--for authentic Mediterranean
flavor. Remove pits from olives before adding to casserole.
