Creamy Chicken Stir-Fry
from Campbell's Kitchen
Prep/Cook Time: 25 min.
1 lb. boneless chicken breasts, cut into strips
3 cups cut-up vegetables (broccoli, carrots, green OR red pepper)
1 can Campbell's(R) Healthy Request(R) Condensed Cream of Celery Soup
1/2 cup milk
1 tbsp. low-sodium soy sauce
1/4 tsp. garlic powder
4 cups hot cooked rice, cooked without salt
Directions:
SPRAY skillet with vegetable cooking spray and heat 1 min. Add chicken and stir-fry until browned and juices evaporate. Push chicken to one side of skillet.
ADD vegetables and stir-fry until tender-crisp.
ADD soup, milk, soy and garlic powder and heat through. Serve over rice. Serves 4.
Kitchen Clip:
1lb. boneless chicken thighs can be substituted for the chicken breasts.
