Herbed Pork Roast & Creamy Mushroom Gravy
from Campbell's Kitchen
Prep Time: 10 min. - Cook Time: 1 hr. 45 min.
1 tsp. minced fresh rosemary OR 1/4 tsp. dried rosemary, crushed
1 tsp. minced fresh parsley OR 1/4 tsp. dried parsley flakes
1 tsp. minced fresh thyme OR 1/4 tsp. dried thyme leaves, crushed
1 clove garlic, minced
2 1/2- to 3-lb. boneless pork loin roast
1 can (10 3/4 oz.) Campbell's(R) Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
1/2 cup water
Directions:
MIX rosemary, parsley, thyme and garlic. Cut small slits into surface of roast and insert herb mixture into slits. Place in roasting pan.
ROAST at 325°F. for 1 hr. 30 min. or until done. Remove roast from pan. Let stand 10 min.
STIR soup into pan drippings in roasting pan. Gradually stir in water. Cook and stir until mixture boils. Slice pork and serve with gravy. Serves 8.
Kitchen Clip:
Refrigerate leftover pork and gravy separately. Slice pork for cold sandwiches topped with applesauce, or reheat sliced pork in leftover gravy and serve over hearty Pepperidge Farm(R) bread.
