Cornish Hens with Pecan Stuffing

Prep Time: 15 min. - Cook Time: About 1 hr.
1 can (14 oz.) Swanson(R) Chicken Broth OR Natural Goodness(TM) Chicken Broth (1 3/4 cup)
4 green onions, sliced
1/2 cup chopped pecans
1/2 cup golden raisins
4 cups Pepperidge Farm(R) Herb Seasoned Stuffing
3 Cornish game hens (about 1 1/2 lb. each ), split in half
1/2 cup peach preserves
1 tbsp. Dijon mustard
Directions:
MIX broth and onions in saucepan. Heat to a boil. Stir in pecans and raisins. Remove from heat. Add stuffing. Mix lightly.
SPOON stuffing across center of greased 3-qt. shallow baking dish, leaving space on both sides for hens. Arrange hens on each side of stuffing. Mix preserves and mustard. Spoon over hens.
BAKE at 350°F. for 1 hr. or until done. When stuffing is golden brown, cover loosely with foil. Stir glaze and spoon over hens before serving. Serves 6.

These elegant stuffed hens can be served with a wild rice pilaf simmered in chicken broth, and a buttered green vegetable. Serve individual cranberry salads and warm Pepperidge Farm(R) dinner rolls on the side. Pop open a bottle of chilled champagne and propose toast a to the new year.
