Seafood & Mushroom Shells
from Campbell's Kitchen
Prep Time: 20 min. - Bake Time: 30 min.
1 pkg. Pepperidge Farm(R) Frozen Puff Pastry Shells
4 tbsp. butter OR margarine
2 1/2 cups thinly sliced mushrooms
1 can (10 3/4 oz.) Campbell's(R) Cream of Mushroom Soup OR 98% Fat
Free Cream of Mushroom Soup
1/2 cup dry white wine OR vermouth
1 tbsp. lemon juice
1 lb. firm white fish fillets (cod, haddock or halibut), cut into 1" pieces
1/2 cup grated Parmesan cheese
Directions:
BAKE pastry shells according to pkg. directions.
HEAT butter in skillet. Add mushrooms and cook until tender and liquid
evaporates.
ADD soup, wine, lemon juice and fish. Cook 5 min. or until fish is
done. Serve in pastry shells and sprinkle with cheese. Serves 6.
Kitchen Clip:
If using frozen fish fillets, thaw quickly by submerging wrapped fish
(in original package) in cold water for about 20 minutes. Fish is easy
to cut when fish is still just slightly frozen.
