Tangy and satisfying, Tomato Chicken Stir-Fry uses ingredients you
probably have on hand. Campbell's(R) Tomato Soup provides the foundation
for an easy and tasty stir-fry sauce.
Tomato Chicken Stir-Fry
from Campbell's Kitchen
Prep/Cook Time: 20 min.
2 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into strips
3 cups cut-up vegetables *
1/4 tsp. garlic powder OR 2 cloves garlic, minced
1 can (10 3/4 oz.) Campbell's(R) Tomato Soup
2 tbsp. soy sauce
1 tsp. vinegar
4 cups hot cooked rice
Directions:
HEAT 1 tbsp . oil in skillet. Add chicken and stir-fry until browned.
Remove chicken.
HEAT remaining oil. Add vegetables and garlic and stir-fry until
tender-crisp.
ADD soup, soy and vinegar. Heat to a boil. Return chicken to pan and
heat through. Serve over rice. Serves 4.
*Use a combination of broccoli flowerets, carrots cut in matchstick-thin
strips and red or green pepper strips.
